The summer is flying by and although the sun is still bright and warm on my face, it’s been a hard summer. If you are on my mailing list, you have probably read about the loss our family suffered a few months ago. We lost a sweet, beautiful woman way too young and the aftermath has been immensely painful.
I have never experienced grief like this and am still in the midst of it and will be for a long time. I am still navigating these feelings with a hope that someday it will all make sense. That day may not come until I get to heaven one day. So the only comfort I find now is knowing that she is safe, perfect and whole with my Savior.
But unfortunately, over the last few months, I have turned to food for comfort, and not the healthy kind. So I am trying to turn things around and get back to eating healthy and exercising again.
That’s why I love this broccoli salad recipe. When you make a few minor swaps with healthy ingredients, it becomes a sugar-free, filling meal all by itself. It’s great if you’re on a low-carb diet as well.
I have added in cauliflower because I love it, but it can be left out and replaced with more broccoli. Also, for a sugar-free broccoli salad, make sure you check the ingredients on your bacon. You want one without the added sugar.
I also use liquid stevia in this recipe. This is the brand I use. It is pretty mild without an aftertaste which is why I like it. Feel free to use less or more than the recipe. Mix together the dressing ingredients and take a little taste.
