Ok, so that Pumpkin Spice Latte isn’t exactly healthy, but with pumpkin everywhere, it begs the question…
Are there carbs in Pumpkin?
For real, how many carbs are in pumpkin anyway?
Before we talk about pumpkin pie and other fall-themed delights starring the darling of the pumpkin patch, you should know about the carbs in pumpkin.
Because I am a sometimes Keto dieter, I had to know just how many carbs are in pumpkin.
So Just How Many Carbs are in Pumpkin:
The good news is that in just half a cup of pureed pumpkin, you’re only getting 6 grams of carbs. Yay!
The bad news? Well, much as you probably suspect, those sugary lattes with pumpkin (it’s not even REAL pumpkin you know) and spice aren’t a wise choice.
If you do choose real pureed pumpkin for your low carb pumpkin recipes, you’ll be treated to some nice healthy bonuses. (Here's a great tutorial for making your own pumpkin puree.)
In addition to the carbs in pumpkin being relatively low, you’ll get a good boost of magnesium, calcium, and iron, plus tons of vitamin A.
Carbs in pumpkin are low, so fitting it into a low carb diet is easy when you avoid those common pitfalls like adding too much sugar rather than spice.
Real, fresh pumpkin is sweet enough on its own and keeps baked goods from drying out.
Plus, if you roast your own pumpkin in the oven, you can use it in tons of ways. Thinks soups and stews, skewers, risotto, fries (which are even better than potatoes!), and plenty more.
And those seeds! Roasting pumpkin seeds is like sealing the deal for fall to truly be upon us.
What if you have too much pumpkin leftover though? Not to worry…it freezes really well. Which you can use to turn into pumpkin ice cream if you’re so inclined (much like with bananas, the frozen density makes it creamy when you blend it).
